Hey guys! So, as promised, I've run a few trials of things and here are the results!
More trials pending my obtaining Fly/Speed and a Melon Sword rental. Error bars are from Std Error. Trials were conducted in various formats, but all involved not spending time doing anything but farming. Therefore values represent maximum values or so. SpdPump is Pumpkin Farming with Speed I Extended Pots. I found that Speed II was too much for my fingers/lag to handle so did not test them.
Netherwart and Cocoa were both tested without Speed pots because strafing even with Speed I pot will leave a gap every 8-10 blocks (unless using an alternate method of right-clicking).
Of those crops shown, only Cocoa requires a clever set-up to achieve this rate. The rest were tested at ValleyFarms.

However, I believe that fly doesn't decrease sugarcane break rates so a higher maximum speed is theoretically possible while breaking it AND one could line it up to break up to 4-5 stalks at a time as opposed to 1-2 for pumpkins. That being said, I have a reasonably decent PC, and doing this at high speeds lagged me like crazy, so while it's theoretically possible, the practicality is low. -
There is also this design of a farm, I just bulit it, Not very big and havent done much testing, some times stacks do get stuck on the lvls of cane. So a player with out fly, it makes it kinda hard

I built one of those approximately 20 "rows" high and 30 blocks long (two sets of 15). I was planning to expand it so I built 1 functional unit of a theoreticaly fully expandable farm system to test it. Unfortunately, sugarcane prices are so low, that I get only 90-180 dollars per button click. Also requires about 1 bajillion buckets and dispensers (which refund at 30 cents per harvest). Therefore, while theoretically a nice idea, the incredibly low yields make it more worthwhile to plant two 64-long rows of cocoa instead [which is less-afk-able, but not by much]. Also water tends to get trapped sometimes next to the dispensers so it has to be manually put back in (not sure why, chunk-related issue probably).

Interesting study, but how could you stand one hour of just farming? Even when I think I have my attention focused on pumpkin farming, I can only make about 4.5k an hour, tops.
