This is currently happening at my set up as well. One thing that may be of interest is that they despawn every 5 seconds exactly. Regardless of how many there are that have spawned, they all despawn on every 5th second on the dot.
@Speed42jh this is a known bug atm, it happens when you teleport away from your setup and come back. I've found the best way to avoid it is to just store as much stuff as you can in shulkers and only sell once all your shulkers are full
