Just ran a test with me and @killrdarknes for 2 hours of data
Max Fortune pick vs max fishing rod

    Fishing
    Hour 1- $9137.5 + 1.65 nstars
    Hour 2- $8425 + 1.36nstars
    Average- $8781 + 1.505 nstars (so ~$9581)

Mining (may have had an additional couple of minutes because i took a minor break)
    Hour 1- 16688.15 + 3.38 nstars
    Hour 2- 16281.55 + 3.56 nstars
    Average- 16484.85 + 3.47 nstars (so ~$18884)

Keep in mind the same notes as above, Maineast mining = fresher mining world.
Based on this small amount of data, it seems as though max tools are about half as efficient as startools. This makes sense, as startools are meant to be end-game money making.
Mining still is going to drastically dependent on the status of the mining world, but for the time being, the data actually suggests that maxpick mining is actually better then the base amount for fishing with a starrod.

So yea, mining is not equal to fishing/farming, its actually better (apparently).
