While looking through the minecraft.jar while I was bored, I found some pretty interesting pictures. My guess is rubies were supposed to be what emeralds ended up being, which may explain in previous snapshots before 1.3's release the ores were originally red. Check it out for yourself.
These are found in the current 1.3.2 minecraft.jar so I'm wondering if Mojang may be planning to release yet another ore soon. Post your ideas below :)

Yeah, if you check the change logs, Mojang was originally planning to release rubies but had never done so. It's not unusual for them to leave unused stuff in the code though. For example, the quiver was there for over a year and they never implemented it.
