    Let's say I have a little chicken farm. While I'm offline or mining somewhere else and the chickens lay eggs if I come back an hour later, will they be there still?

    The chunks must be loaded for the chickens to have any activity (egg-laying) whatsoever.

    the eggs despawn after 5 minutes if the chunks are loaded (if someone is nearby) also you have to be nearby for the chickens to spawn eggs.
