Eff7 Axe:
Lee1104 tested the Eff7 axe vs the Eff5 axe on pumpkins. We did not find any noticeable difference. While using a high speed, he did 1 row (two rows of pumpkins) with E7 and 1 row with E5 and then checked to see if the E7 broke more pumpkins. Repeated the test twice. The rows all looked like they had the same number broken.
The Eff7 Axe does not break pumpkins instantly while flying.
While walking, the Eff7 and Eff5 Axes break logs at the same speed.
While flying, the Eff7 axe breaks logs faster than the Eff5 axe.
Eff7 Shovel:
While flying, the Eff7 shovel breaks clay faster than the Eff5 shovel.
Just from my personal use of this shovel, there is no noticeable difference between it and Eff5, except while breaking during flying.

I'm curious as to just how much faster the eff7 tool is in comparison to an eff5 while flying. Is it very noticeable?

It is pretty noticeable. I would have to do more tests to give you an accurate answer though.
Axe: we set up two rows of 64 logs. the eff7 finished its row while the eff5 still had 10-20 logs left
Shovel: we set up two rows of 128 clay blocks. the eff7 finished its row while the eff5 still had ~20 clay blocks left. -

I forgot to mention one last benefit for the Eff7 Axe. You can jump and break a log before you fall back to the ground. Useful for getting that last log at the top of the tree. haha
