Yes, this has happened to me a lot of times (5-10), mostly with carrots but maybe once or twice with potatoes.
It happens to me when walking and farming, not sprinting. Of all potato/ carrot farming I have done, it has only happened once.
This also happened to me, didn't see it happening until after harvesting around 2 stacks, happened twice.
