This is a matter of lag - ive had the same experience if u relog - youll see that the wheat wasn't actually harvested in the first place , like when u mine a block and its still there but invisible until you relog edit: ive tried to reproduce this in the past - just harvest the wheat super fast -> get a lag spike -> invisible unharvest wheat fix would be plant a seed and it corrects itself or relog
