Just a lag issue, I think. I've had the same issue, pumpkin farms can get quite laggy at times. Nothing you can do about it :/
This is normal. When you chop really fast (like with pumpkin axes or super mining speed) the server can't catch up with the client. So you see that you destroyed a block, but the server and everyone else sees that the block is still there. All you have to do is place any other block where the "invisible" block is, and it'll update the client and you'll see the right block there.
