This is caused by lag. If you tp out of the area and come back, or log out and log back in, you will see that there is actually a melon that did not break (although on your screen it looks like it did). This happens to me many many times a day for many many types of blocks.
If you rightclick the area where you rubberband you will see that there's still a melon there. This is simply lag on your end, you can reconnect or right click the rubberband areas to fix it, but that is only a fix until you get more invisible blocks.
