I found a way to break a protection wothour having access to a door: Heres the way to replicate it Put a door on top of gravel at least 2 blocks high Have somone protect the door Break the lowest block and it will destroy the entire block and protections
Its the same with signs and the sort, but to my knowledge there isnt really a way to fix it. Unless you're deciding to make protections effect blocks around something. One should be smart enough not to make the mistake of putting an item like a door or sign on gravel or sand, to be honest.
