Hi,
If you have been in a situation like me you will understand why i would like a Enchantment confirmation instead of enchanting item in hand automatically.
It all started when i wanted to enchant my diamond pants with unbreaking I but when i accidently hitted it with
my maxed fortune pick it took unbreaking III to unbreaking I.
That is why to prevent future mistakes like this we should have a confirmation before enchanting.

Sorry this happened to you but the developing team honestly doesn't have time to create a custom plugin for confirmations on signs when a user should be more careful in the first place.
